My sister Rachael (Rae) made this meal for our family and everyone loved it! I decided this would be a good meal to share. Marinate tofu overnight or 30 minutes prior to meal. I use a frozen stir-fry. Aside from simplifying the meal and minimizing prep time, they contain snap peas and mini corn which is hard to come by otherwise.
This is our go-to recipe for waffles and pancakes. We like to add peanut butter and fresh fruit on top to get our berries and nuts in for the day! Sometimes I mix the dry ingredients ahead of time if I want the morning to be smoother or if we are camping. Once I’m ready to make them, then I add the wet ingredients. If you don’t use the entire mix at once, more milk may need to be added as it gets thick the longer it sits.
